Apples w/Date Caramel Dip Recipe

Apples are readily available this time of year! Besides being delicious and festive, they also provide nutritional benefits. It has been shown that apples have the ability to help regulate blood sugar through a series of mechanisms. Apples and caramel go hand in hand, however, traditional caramel is very high in refined sugar. Listed below is a healthy alternative caramel, to dip your apples in!

Caramel Dip:
10-12 Medjool Dates
1 ½ cups Hot Water
1 tablespoon vanilla extract
Salt to taste
2 tablespoons coconut cream (optional)
1 teaspoon lemon juice (optional)

Remove pits from the dates and add to food processor, add half of the hot water. Process until smooth. Combine vanilla extract to dates, and process. Add hot water until you have reached the consistency desired. Add salt to taste.
For a creamier caramel add coconut cream and process to desired consistency.
