The Pumpkin Craze

Yes, it’s that time of year again where pumpkins are showing up everywhere in our daily lives. Outside the grocery stores, in our facebook and instagram feeds and let’s not forget- at the friendly local, Starbucks. The return of the seasonal pumpkin spice latte has made it’s debut once again!

One of the first foods that comes to mind when I think of pumpkins is my grandmother’s pumpkin pie. But I wanted to write this blog to remind readers about the savory, healthy ways pumpkin can be used in many seasonal dishes. I also wanted to highlight the nutritional benefits of pumpkin. In my book, I would consider it almost a superfood. Considered a part of the winter squash family, pumpkin is full of many vitamins and minerals, especially potassium and Vitamin A. According to a journal article written in the Web of Science, eating yellow- orange foods that are rich in carotenoids can help to protect cells and tissues from free radical damage, enhance immune function, protect from sunburn reactions and delay the onset of certain cancer types. Eating pumpkin can also support a healthy heart, eye health and fertility in woman.

And don’t forget about the pumpkin seeds after carving out the jack-o-lantern. These offer just as much nutrients, if not more. The tasty powerhouse seeds pack a lot of nutritional bang for their buck. They offer antioxidant support, promote blood sugar balance, have antimicrobial benefit and promote men’s health due to the phytosterols found in the seeds that help treat Benign Prostatic Hyperplasia.

And here’s a tip to better digest the seeds. Soak them in water the night before. This will make them more digestible, while enhancing their notes of a slightly sweet flavor.
